* I suggest using boneless hen lower limbs. They are much juicier than hen chests.
** Koreans really like grain food in their hen galbi, but it is hard to find in non-Korean marketplaces.
*** Use Western curry dust or Western curry dust only. I do not add curry dust to hen galbi, but many dining establishments do.

1. Mix thoroughly the hen, veggies and spices or herbs in a large
bowl. You can marinate for several time or instantaneously, but stir-frying them without marinating is excellent because the liven mix has a powerful taste.
